Banana and Walnut Muffins

Banana, Walnut and Sultana Muffins - still trying to get that perfect muffin top rise just can't seem to get it! Anyone got any tips for me?

Ingredients:

2 Eggs
5 Tbsp Oil
5 Tbsp Milk
1 Tsp Vanilla Extract
2 Ripe Bananas
(I know the photo only shows 1)
200g Self-Raising Flour
½ Tsp Baking Powder
100g Sugar
Handful of Sultanas
Handful of chopped Walnuts

What you will also need:

Mixing bowl
Electric Whisk
Spatula
Mixing Spoons
Fork
Bowl
Scales
Muffin Tray
Muffin Cases

Oven 200°C

Baking time 20 - 25 minutes

Method:

Whisk your eggs, oil, milk and vanilla in your mixing bowl for about a minute

In your bowl mash your banana with your fork

Add the banana to your mixture and mix it with your spatula. Once the banana is mixed in. Add your flour, sugar and baking powder.

Then add your sultanas and walnuts. Once everything has been mixed in pour it into your muffin cases

Fill your mixture right to the top of the cases

Then bake for around 20 - 25 minutes till they're golden and risen

These are super easy to make but just don't look like shop bought with the "muffin top" dome. Any ideas on how to do it? Maybe more baking powder or a higher heat? Please let me know!

Coconut Cookies

Made coconut cookies for my dad for father's day! Super easy to make - they're the same as the Coconut and Oat Cookies I made without the oats.

Ingredients:

(The photo doesn't have baking powder or salt but you definitely need both!)

112g Unsalted Butter
(Half a block of butter at room temperature)
100g Caster Sugar
110g Soft Brown Sugar
1 Egg
1 tsp Vanilla Extract
158g Plain Flour
1 tsp Baking Powder
1 tsp Bicarbonate of Soda
¼ tsp salt
100g Desiccated Coconut

What you will also need:

Mixing Bowl
Electric Whisk
Wooden Spoon
Measuring Spoons
Scales
2 Smaller Bowls
Fork
Sieve
2 Baking Trays
Baking Paper

Oven 180°C

Baking time 8-10 minutes

Method:

Mix the butter with the 2 sugars with your electric whisk until it turns pale and creamy. Use your wooden spoons to check the consistency.

In a small bowl beat your egg and vanilla extract with a fork.

Then pour that into your mixture and whisk with your electric whisk. Then use your wooden spoon again to check it's well mixed.

Once it has been mixed you can sift in all your dry ingredients - flour, baking powder, bicarbonate of soda and salt. You don't need your electric whisk no more - mix with your wooden spoon.

Once your dry ingredients have been mixed in you can add your coconut in.

Put some flour on your hands and roll your dough into balls and place them onto your baking trays lined with baking paper. The dough might be quite wet and greasy.

Bake for 10-12 minutes until they have turned golden. When you take them out they will still be a bit soft just leave them to cool on the tray then transfer onto a wire rack to completely cool.

Soft and chewy coconut cookies!

I've seen online if you put half a slice of bread in your sealed container with the cookies it should keep them soft and chewy.. I'll keep you updated on whether that actually works or not!
