Banana and Walnut Muffins


Banana, Walnut and Sultana Muffins - still trying to get that perfect muffin top rise just can't seem to get it! Anyone got any tips for me?

Ingredients:


2 Eggs
5 Tbsp Oil
5 Tbsp Milk
1 Tsp Vanilla Extract
2 Ripe Bananas
(I know the photo only shows 1)
200g Self-Raising Flour
½ Tsp Baking Powder
100g Sugar
Handful of Sultanas
Handful of chopped Walnuts

What you will also need:

Mixing bowl
Electric Whisk
Spatula
Mixing Spoons
Fork
Bowl
Scales
Muffin Tray
Muffin Cases

Oven 200°C

Baking time 20 - 25 minutes

Method:

Whisk your eggs, oil, milk and vanilla in your mixing bowl for about a minute


In your bowl mash your banana with your fork


Add the banana to your mixture and mix it with your spatula. Once the banana is mixed in. Add your flour, sugar and baking powder.


Then add your sultanas and walnuts. Once everything has been mixed in pour it into your muffin cases



Fill your mixture right to the top of the cases

Then bake for around 20 - 25 minutes till they're golden and risen



These are super easy to make but just don't look like shop bought with the "muffin top" dome. Any ideas on how to do it? Maybe more baking powder or a higher heat? Please let me know!
