What Asian?

Pasta Bake












I made a pasta bake for dinner last night, the cheese on top is a little burnt but it was fine & really nice!
This is only one of the ways I'll eat cheese if it's melted on top of pasta, lasagne, pizza, cream cheese or cheesecake. I won't eat a cheese sandwich or have slices of cheese.

This is going to sounds like a really rubbish recipe as I'm not going to be giving any measurements really it's all down to personal preference. I did follow a recipe from when I did food tech in like year 7/8 but all the ingredients & the amount I used was what I liked & wanted.

I used peppers, parsnips, bacon for the filling but it's up to you what veg you want to use, in the past I've used carrots, courgettes, onions. But I've always used bacon.
Boil your pasta & drain it however much you want & place it at the bottom of the baking dish you're going to use. Then fry the bacon & veg, once that's cooked put it on top of the pasta. Pour a whole can of tomato soup & 100ml of milk (you can add more if you want it to be more creamy) Then top with cheese. My mum bought cheddar but I think parmesan is a better cheese to use. You can put as much as you like, I didn't put that much as cheddar is quite salty & I don't really like cheese!
Then back it in the oven at 190°C for 45 minutes or until the top is golden & crispy.

That's how easy it is! No messing about with quantities just all down to personal preference of what you like & want!


Pesto Pasta

Today's lunch... Yet again for pesto pasta it's all down to preference to what you like as I didn't follow a recipe it's all the veg I like.

I boiled bacon, then a whole 200g bag of spinach. Drained it & put them back in the same pan. I used the left over pasta from last night, put that in the pan, chopped some peppers, lettuce & some sweetcorn. Then put about 4 teaspoons of green pesto. Yet again it's completely up to you how much pesto you want to put in depending how much you like & you can put whatever you want in it!


Fajitas







For tonight's dinner I made fajitas, with chicken, peppers, onions. I use a jar of fajita powder but you can buy the packs that come with the wrap & sauce where you just add chicken & veg to it. I prefer using pork as you it's not as dry, as this was really dry & I could have done with some salsa or sour cream, but it was ok.

I think fajitas are one of the easiest things to make all you done is fry the onions, fry your chicken making sure it's cooked thoroughly, throw your peppers in & add about 2 tablespoons or more of the fajita powder then you can use tortilla wraps, pita bread any wraps you want so easy & quick! I tried these Warbutons easy roll wraps for the first time, I cut it into quarters then toasted them & thought they were really nice, you don't have to toast them it's up to use. I prefer pita bread cut in half to have 2 pouches cos it's less mess that way.

This post is to show yes I am Chinese but we don't actually have Chinese food for dinner every night well not when I'm in charge of cooking anyway! I actually love pasta & would rather we ate pasta every night instead of rice. It also shows that you don't always have to follow a recipe when it comes to cooking. It is all down to personal preference to make it how you like it which I think what cooking is about. This is why I prefer making my own food rather than eating out as you know exactly what is in it you can control the flavourings. Experiment different things, if it works great if not try different things until you find what fits for you! Apologies again how vague this post sounds but at leas it doesn't restrict what you can & can't do!

Movie night...





















Reunited with these 3 weirdos! We went to Danielle's house to have a movie night. We didn't end up watching any films, we just had a catch up & Hannah wanted a new profile picture so it turned a bit into a photo shoot... Here is a selection of some of the better ones...

Also went the gym for the first time in 3 weeks today & didn't realise how unfit I could get in that time! Worse than what I was before I started going! I couldn't do the same weights as before & got a stitch after a 30 minute run! Thought I was gonna pass out the gym is so hot cos they don't have the air con on! But I'm free now so will be going every day so should be fine in no time.

Finally going to see The Amazing Spiderman 2 with Danielle & Kelly tomorrow! Been wanting to see this since the first one. Love love love Andrew Garfield & Emma Stone!

So that's it 3 years at the University of Liverpool BA Hons Sociology is finally over!! It has been the quickest & hardest 3 years of my life. It doesn't even feel that long ago I was walking round on the open day being show all the buildings & touring the library. Being late to the very first lecture! It's crazy how quick it's gone but I am so relieved it's over because I honestly can't say I've enjoyed any of it. Before I even started I'd already regretted choosing the course & from the first lecture that regret was proven. I was determined to stick it out because once you start you have to finish! (Also it would have been too much effort to change course etc)

It most definitely has been an emotional roller coaster with blood sweat & plenty PLENTY of tears along the way! I think I cried through every essay this year & had numerous breakdowns that I've lost count. I feel I've been lied throughout school especially 6th form being told uni is amazing you'll make the bestest friends, have the bestest time of your time, it's easier than A-levels which I really haven't but then I think that might be because I did live at home & didn't get into the the proper uni experience. I do regret not moving out & doing freshers properly but the money I've saved has meant I can go to Florida so I guess I can't regret it that much.

I just hope now after all that I will graduate come the 15th July because it will be bigger achievement than what it is after what I've been through. I will be crying for many reasons. Especially the past couple of weeks I've learnt a lot about myself that's for sure. 
I learnt that my time management most definitely isn't good, putting things off is not the way to deal with situations. I can't deal with stress but also don't help myself to relieve it.
I can actually write over 3,700 words in 3 days if I really put my mind to it. I can read just under 300 pages in 3 days. (The first proper book I have completed since primary school!) I completed my 10,000 word dissertation in 7 days which wasn't ideal & not how I planned or how it should have been done.

After handing my last essay today I met up with Danielle & Kelly for lunch. Kelly came back this morning at 9am from her amazing year aboard in America at the University of Illinois. Which I'm extremely jealous of & most definitely would have done if I had that opportunity! We went to Cafe Rouge, I'd never been before & above is what we ordered. I went for the clean healthy option as I'm back to the gym training again as I have less than 3 weeks before I got Florida! One thing I've really missed the past 3 weeks is the gym, I cannot wait to go there tomorrow & work out a sweat!! 
The weather was amazing today 23°C! Over the knee socks was a really bad idea & I forgot how much of a pain there are constantly falling down...

I would like to say thank you to everyone who helped & supported me through the past 3 years. Listening to me moaning & having breakdowns nearly everyday but telling me I can do & I will do it even though at times I seriously was ready to give up. This is just the start of my life even though it's so scary & I would love to be a student forever, to just be young, careless but sadly I have to face up to reality!

I know on my last post I said I won't be posting until the 19th but I couldn't help it!
Nike x Liberty London went on sale in their stores & online on Monday 7th April so like a month ago so I've left it a bit late to write this post... But they shoes are going on sale in Office stores worldwide tomorrow!

I love love love Liberty London & they've done it again collaborated with Nike! They did a collection like 3 years ago & I loved them but didn't manage to get a pair of Nikes sadly! I love the prints they've so nice. I am obsessed with floral prints as you will know by now.
The trainers aren't actually that expensive they're the same price as the normal ones without the Liberty print looking at their website, which I'm guessing they will be the same price when they go on sale in Office.

I'm hoping to get myself a pair but I'm not sure yet! I actually love all of them & wouldn't mind which pair I get apart from the Dunk Sky Hi, I prefer the first pair, all floral without the blue band.
I love the clothes as well especially the shorts but I think they're very pricey for £50.
