Apple Scones


Tried something different tonight. Apple scones as my nan gave us some cooking apples from her garden. 


Ingredients

225g Self raising flour
50g Butter (at room temperature)
4 Tbsp Sugar
¼ Tsp cinnamon
1 medium apple - cored & diced
125ml Milk

Preheat your oven to 200°C

In a large bowl mix your flour & butter together using a fork & hands until they're like breadcrumbs.



Add the cinnamon. 


Add sugar.


Apples peeled & diced can be added.



Mix the mixture all together. (I added sultanas again) Once it's all mixed flour your work top & roll your dough out.


Cut your dough using a cutter. Make them around 3cm thick. 

Flour your tray & place your scones on it. 

Brush the tops with a bit of milk. I actually forgot to do that until I put them in the oven & had to take them out to brush over. 

Bake for 20 minutes until the tops are golden. 


They look really pale as I forgo to add the milk wash on the top which I'm disappointed with. They're nice I will definitely make them again (better).

Banana Muffins



Ingredients

75g / 3oz Melted butter
250g / 9oz Self-raising flour
1 tsp Baking powder
½ tsp Bicarbonate of soda
Pinch of salt
½ tsp Ground cinnamon
½ tsp ground nutmeg (optional)
115g / 4oz Caster sugar
1 tsp Vanilla extract
2 Large, ripe bananas
2 Medium eggs
125ml / 4floz Milk
Walnuts (optional)

Preheat the oven to 190°C


Melt the butter in a pan & allow it to full cool.

Sift the flour, baking powder, bicarbonate of soda, salt, cinnamon & nutmeg together in a large bowl, add the caster sugar & stir with a wooden spoon. (Optional to sift, I didn't)







In a separate bowl or jug using a fork beat the eggs, milk, vanilla extract, melted butter.








Mash your bananas in a bowl



Add your bananas to your liquid mixture


Give it a quick mix

Make a well in the middle of your dry mixture


Pour the liquid in slowly




Mix it with your fork. You can now add your walnuts, they work really well with banana!



Make sure you don't over mix it. I added some sultanas to it. As you can tell I like to add sultanas into everything I bake...

In a muffin place paper cases down, pour your mixture in till they're almost full. You might want to grease your cases as the mixture is quite sticky.


Bake for 20-25 minutes, until golden. If you place a skewer & it comes out clean they're ready!



They're nice on their own or you can have it with some yogurt.

Coconut & Sultana Scones


A twist on the traditional scones, coconut scones! Scones can be quite boring so adding coconut to them makes them taste a little bit different to the classic. 
I made them with the same recipe as my previous scones post but just added coconut to it.

8oz / ½ lb / 227g - Self Raising Flour
2oz / 57g - Sugar
3oz / 85g - Margarine - soften at room temperature
100g / 3.5oz Desiccated coconut
2 Eggs
Sultanas (Up to you how much you want to put in)

Optional
1 tsp Vanilla extract (Gives it more flavour)


Pre-heat oven to 200°C 
Baking time 15 - 20 minutes

(Drop of milk to brush over the top)


Mix the flour & butter together




Once they're all mixed you can add your sugar & coconut


Then add your sultanas. Up to you how much you want


Whisk your 2 eggs with a fork. In a bowl/mug/jug



Add 1 teaspoon of vanilla extract to it



Once it's mixed add it to your mixture



The coconut can dry your mixture, if it's looking a bit dry add some milk to it. Make sure you don't add too much as you don't want your dough to be too wet. 

Once all your ingredients are mixed it's time to get your hands dirty & to roll your dough out to the thickness you want. Get your cutter to cut them. Make sure you flour your hands & your work top!

The cutter we have is pretty big & doesn't have grooves around it, it's just a plain round circle. Should really invest in some cutters.

Flour your baking tray then place your scones down & brush the top with some milk.

Bake for 15-20 minutes at 200°C until golden
