Banana Muffins



Ingredients

75g / 3oz Melted butter
250g / 9oz Self-raising flour
1 tsp Baking powder
½ tsp Bicarbonate of soda
Pinch of salt
½ tsp Ground cinnamon
½ tsp ground nutmeg (optional)
115g / 4oz Caster sugar
1 tsp Vanilla extract
2 Large, ripe bananas
2 Medium eggs
125ml / 4floz Milk
Walnuts (optional)

Preheat the oven to 190°C


Melt the butter in a pan & allow it to full cool.

Sift the flour, baking powder, bicarbonate of soda, salt, cinnamon & nutmeg together in a large bowl, add the caster sugar & stir with a wooden spoon. (Optional to sift, I didn't)







In a separate bowl or jug using a fork beat the eggs, milk, vanilla extract, melted butter.








Mash your bananas in a bowl



Add your bananas to your liquid mixture


Give it a quick mix

Make a well in the middle of your dry mixture


Pour the liquid in slowly




Mix it with your fork. You can now add your walnuts, they work really well with banana!



Make sure you don't over mix it. I added some sultanas to it. As you can tell I like to add sultanas into everything I bake...

In a muffin place paper cases down, pour your mixture in till they're almost full. You might want to grease your cases as the mixture is quite sticky.


Bake for 20-25 minutes, until golden. If you place a skewer & it comes out clean they're ready!



They're nice on their own or you can have it with some yogurt.
