Apple Crumble Muffins

Super easy to make Apple Crumble Muffins.

Ingredients:


For the muffins:

120ml Milk
80ml Vegetable Oil
1 Egg
1 Tsp Vanilla Extract
160g Plain Flour
2 Tsp Baking Powder
¼ Tsp Salt
150g Sugar
2 Apples
Handful of Sultanas

For the crumble:

60g Cold Butter
65g Plain Flour
50g Brown Sugar
1 Tsp Cinnamon
2 Tbsp Porridge Oats

Utensils:

2 Large Mixing Bowls
Jug
Whisk
Spatula
Measuring Spoons
Scales
Table Spoon
Peeler
Knife
Chopping Board
Muffins Cases
Muffin Tray

Makes: 12

Baking Time: 20 - 25 Minutes

Oven: 175°C

Method:

Mix the milk, oil, egg and vanilla with the whisk in one of your mixing bowls.



Once mixed set aside.

In another bowl mix your dry ingredients - flour, baking powder, sugar and salt with the spatula.


Peel your apples, them chop them into small chunks.
Place you apple chunks into the flour mixture and mix well to ensure the apples are well coated.



Then add your sultanas and mix.


Mix your wet mixture into your dry mixtures until well combined.


Set aside.

Now to make the crumble. You can use the bowl that had your wet mixture in.
Combine all the crumble ingredients in the bowl and mix together with your fingers until you get fine crumbs.



Pour your muffin mixture into the cases, filling them 
¾ full. Then sprinkle the crumble mixture onto top covering the mixture evenly.



The recipe says it makes 12 but I did struggle to pour it out evenly to get 12!

Bake in the oven for 20-25 minutes until golden brown. The clean skewer doesn't really work as there's that much apple each time I tried to do it I was just poking into apple which wasn't coming out clean!



They're really nice and not too sweet! You can have them with custard or just plain. The cinnamon isn't too strong so you might want to put some in the actual muffin mixture and maybe add some walnuts which would work well.
