Chinese Almond Cookies


 Super easy to make Chinese Almond Cookies

Ingredients:


130g Ground Almonds
180g Plain Flour
100g Sugar
¼ Tsp Salt
1 tsp Baking Powder
1 tsp Bicarbonate of Soda
150ml Oil
½ Tsp Almond Extract (optional)
1 Egg for glazing

Toasted Flaked Almonds / Toasted Whole Almonds

Utensils:

Mixing Bowl
Scales
Wooden Spoon
Measuring Spoons
Small Bowl
Fork
Brush
Baking Paper
Flat Baking Trays
Wire Rack

Baking Time: 15 - 20 Minutes

Oven: 180°C

Combine all the dry ingredients and mix well. Then add the oil and almond extract (if using)


Once all mixed it should be like a damp sand texture.

Using your hands roll them into balls and place them onto your lined baking trays.



Whisk your egg with a fork in a bowl then using a brush glaze thr cookies and place some toasted flaked or whole almond on top.
(I forgot to do this even though I have some!)



Bake for 15 - 20 minutes until golden brown



Leave on the tray for a few minutes to cool then transfer onto a wire rack to cool completely.


I put 1 tsp of almond extract which was way too much and mine taste really strong like perfume artificial almond. I think they would have tasted better without rather than this over powering taste. I did think the mixture was too dry and wasn't going to stick but it did and when you eat them they are quite crumbly.
