Pancakes

Thick American style pancakes. Super easy to make only 4 ingredients.

Ingredients:

110g Self Raising Flour
1 tsp Baking Powder
1 Egg
Milk

Using a non stick pan preferably, heat it up.

In a bowl whisk the flour, baking powder, egg together. Then add milk little by little until you get the right consistency. You want it to be quite a thick batter that you can whisk.

Pour your batter into the pan. If you're using a non stick pan you can pour it straight in otherwise use a little oil or butter to stop it from sticking.

Leave it for a couple of minutes then lift it up to check to see if it's brown. Once it's brown it's ready to flip over. You will start to see it raising & getting thicker. Once both sides are brown they're done!

Pancakes are so easy to make & you can add anything to the mixture. You can try adding cinnamon, ground ginger, peanut butter, vanilla, berries, chocolate or even protein powder. The possibilities are endless.

Once they're stacked you can drizzle with maple syrup, chocolate it's up to you! I like having it with jam or peanut butter.

Carrot Cake Cookies

I seen this recipe for Carrot Cake Cookies a while ago from Kayla Itsines. She's an Australian personal trainer - The Australian female Joe Wicks. She posts healthy recipes, high intensity workouts on her social media, has an app - Sweat with Kayla & has a book with the longest name - The Bikini Body 28-Day Healthy Eating and Lifestyle Guide. 200 Recipes and Weekly Menus to Kick Start your Journey.

Ingredients

100g Porridge Oats
75g Ground Almonds
1 tsp Baking Powder
1 tsp Ground Cinnamon
½ tsp Ground Ginger
2 tbsp Olive Oil
1 Large Egg
2 tbsp Maple Syrup
1 tsp Vanilla Extract
1 Large Carrot, grated

Preheat your oven to 160°C

In a large bowl mix your oats, almond, baking powder, cinnamon & ginger

In another bowl mix the oil, egg, maple syrup & vanilla extract

Once it's all mixed add your grated carrot

Add your wet mixture to your dry mixture & stir to combine

It's quite a dry mixture I feel like it needs milk or something... Once it's all combined place heaped tablespoons of the mixture onto baking paper & flatten with the spoon leaving enough space for them to spread.

Bake for 15-20 minutes until they are golden & firm

I feel like they're missing something they're a bit dry. Could do with adding some sultanas & nuts to make it taste more like carrot cake. It's a nice healthy snack to make.

Chinese New Year

Happy Chinese New Year! Year of the Rooster 2017

恭喜发财! 新年快樂!

Happy Birthday Nanny Wing!

Happy Chinese New Year! Year of the Rooster which is my zodiac which means it should be a good year for me & my fellow roosters.

Had the usual dinner at Nanny Wing's last night, sadly not a full house with a couple of the Wing's missing so a spacious table for a change.

Still a full spread.

Tonight we went to Chung Ku restaurant to celebrate Nanny Wing's birthday.
A couple missing, my mum & dad (gone on holiday without me for their wedding anniversary) Gary, Kirsty & baby Lucas (Lucas isn't well).

Love Thy Neighbour

Went out for lunch today with Holly to Love Thy Neighbour on Bold Street. We've both been wanting to try a smoothie bowl after seeing them all over Instagram. If you don't know what it is you'll probably recognise it if you have Instagram. It was the big hipster thing going round L.A, Australia & London with the clean eating craze last year.

It's basically a smoothie in a bowl with either granola or porridge oats with fresh fruit, dried fruit & seeds. Super healthy.

Love the interior with the plants in the ceiling.

Holly's green tea

From Holly's Instagram

From a photo they've posted on their Facebook I think the smoothie is made with avocado, spinach, agave, & banana. Granola with raspberries, blueberries, desiccated coconut, chia seeds & berries. They don't have a website yet & don't have a menu on their Facebook page which is annoying.

All the food they do are all super healthy like avocado on toast, poached eggs, smoked salmon, sweet potato wedges, pancakes, Buddha bowls (also a big Instagram craze), vegan cakes, smoothies, fruit juices, healthy teas & coffees. They're open 8am-11pm & even do cocktails.

We both really enjoyed & glad we tried it. We were a bit unsure on whether it was a good idea to both get exactly the same thing as they only have the one smoothie bowl on offer. I would definitely recommend, it was refreshing & filling. We just wished we were having it somewhere a little more exotic rather than a cold, miserable, wet Liverpool.

Moose Coffee has been feature in the The Guardian's The 50 best breakfast places in the UK for the North West. The waffle & pancakes are good as mentioned on my blog here back in October. Love how well all these independent business' are doing. Getting noticed outside of the city. Like I've said before I'd much rather support them then the usual big franchises which are all over the place!

Coconut & Pecan Oat Cookies

Something a little different Coconut & Pecan Oat Cookies. Pretty easy to make, chewy on the side & crispy on the outside exactly what you want from a cookie!

I got my recipe from allrecipes.co.uk but adapted it to what I had in my cupboard. The original recipe everything is doubled & uses walnuts which I didn't have but happened to have pecans. Similar nuts so doesn't make that much of a difference so it's up to you if you want to use pecans or walnuts.

125g Plain Flour
½ tsp Baking Powder
¼ tsp Bicarbonate of Soda
Tiny pinch of Salt
100g Butter
100g Brown Sugar
100g White Sugar
1 Egg
1 tsp Vanilla Extract
100g Porridge Oats
80g Pecans, chopped
80g Desiccated Coconut

Preheat the oven to 180°C

Sift the flour, baking powder, bicarb of soda & salt into a bowl

In a separate bowl using an electric whisk, whisk your butter

Add you sugar to your butter & beat it together until you get a smooth mixture

In a small bowl using a fork beat your egg

Add your egg to your wet mixture

Add the vanilla extract & whisk it all together

Once it's all smooth add you dry mixture in small spoonfuls

Add the porridge, pecans & coconut

Once it's all mixed using a tablespoon place small mounds onto your tray lined with baking paper. Make sure you leave enough space as they will spread!

The recipe says bake for 10-12 minutes but it took me around 35 minutes as our oven is that old & rubbish. But I would say around 15 minutes until golden & you have crisp edges.

Take them out of the oven to rest then place them onto a wire rack to cool down.

If you try this recipe yourself let me know how long it took you to bake as it definitely shouldn't have took 35 minutes!
