Healthy Snack Bars


 I made healthy snack bars as Liverpool is currently in tier 3 lockdown means the gym is shut again.. so I have to try and keep myself busy. (I'm actually doing home workouts this time and not wasting the time away like last time!) 

I tried another Kayla Itsines recipe - healthy snack bars which are super easy to make and are also sugar free!



Ingredients:

4 tbsp Peanut Butter/Nut Butter of your choice
4 tbsp Honey
½ tsp Vanilla Extract
100g Rice Crispies
30g Mixed Nuts
30g Mixed Seeds
30g Dried Fruit

What you will need:


Mixing Bowl
Scales
Wooden Spoon
Measuring Spoons
Spoon
Jug (Microwavable)
Baking Tray
Baking Paper
Wire Rack

Oven 150°C

Baking Time 20 - 25 minutes

Method:


Melt your peanut butter, honey and vanilla extract in a jug in the microwave for about 20-30 seconds till it turns into a liquid and smooth. (I forgot to take a photo of it!)

Mix all your dry ingredients - rice crispies, nuts, seeds and dried fruit in your mixing bowl. 
Once it's all mixed pour your melted peanut butter, honey and vanilla extract mixture in. 
Mix until well coated and combined


Once it's well mixed place into your baking tray which has been lined with baking paper - ensure the baking paper overhangs the sides so you can easily remove the bars from the tray once cooled.

Using a spoon ensure it is flat and evenly spread in the tray.


Bake for 20-25 minutes until lightly golden.


Leave to cool in the tray for a couple of minutes then pull it out using the baking paper and place onto a wire rack to completely cool.
Once cooled you can cut to size you want.



Trying to do a photoshoot is hard especially when you're not using natural light. These look and taste so much better than the photos look!

They're super easy to make and perfect as a post or pre workout snack. You can use any nuts, seeds or dried fruit you like. I had sesame, pumpkin, sunflower and lin seeds (bag of mixed seeds.) Cashew, blanched almonds, walnuts, hazelnuts, (bag of mixed nuts) pecans and sultanas. I toasted the seeds and nuts first in the oven for about 5 minutes first and let them cool before using them.
