Dairy and sugar free oatmeal cookies
Made these healthy dairy and sugar free oatmeal cookies. The photo on the top has coconut and the bottom doesn't. They also have different nuts in them. They're super easy to make, quick and you can change and add whatever you want in them!
Ingredients:
100g Porridge Oats
60g Desiccated Coconut
50g Ground Almonds
1 tsp Cornflour
1 tsp Baking Powder
Pinch of Salt
3 tbsp Melted Coconut Oil
2 tbsp Honey
1 tsp Vanilla Extract
4 tbsp Warm Water

What you will need:

Makes - 16 cookies
Baking time - 12 - 15 mins
Oven - 170°C
Method:
Mix all your dry ingredients together until well combined - porridge oats, coconut, ground almonds, cornflour, baking powder and salt.
In your jug melt your coconut oil in the microwave for about 20-30 seconds until it turns to liquid. Then add your honey, vanilla extract and warm water. Then pour your liquid into your dry mixture until well combined with your wooden spoon.
Once it's well combined roll them into a ball with your hand and place them onto your baking tray. Use a fork to flatten them (I forgot to do this).
Leave enough space for them to spread.
Leave them on the tray to cool down for 5 minutes before transferring them onto a wire rack to completely cool.
Tray 2 - I ran out of coconut so used 110g of almond flour. It has some left over toasted cashew nuts and mixed seeds as tray 1.
I prefer tray 1 as it has coconut which makes everything taste better and the sultanas gives it that little extra sweetness. They are super easy and quick to make thanks to Kayla Itsines recipe which said you would get 16 cookies and it did as I did 2 separate batches.
