Caramilk Cookies

 


Haven't baked in a very long time and felt like I've forgotten how to. Made some Caramilk Cookies this weekend.

Ingredients:



125g Unsalted Butter, softened
(Take it out over night)
90g Light Soft Brown Sugar
65g Caster/White Sugar
1 Egg
1 Tsp Vanilla Extract
225g Self Raising Flour
½ Tsp Salt
½ Tsp Bicarbonate of Soda
(The photo is showing baking powder but I actually used Bicarb!)
1 Bag of Caramilk Buttons Crushed

Utensils:


Mixing Bowl
Electric Whisk
Wooden Spoon
Measuring Spoons
Scales
2 Smaller Bowls
Fork
Sieve
Cling Film
Table Spoon
2 Baking Trays
Baking Paper

Oven 180°C / 160°C fan

Baking time 8-10 minutes

Method:


Mix the butter with the 2 sugars with your electric whisk until it turns pale and creamy. Use your wooden spoons to check the consistency.


In a small bowl beat your egg and vanilla extract with a fork.


Then pour that into your mixture and whisk with your electric whisk. Then use your wooden spoon again to check it's well mixed.


Once it has been mixed you can sift in all your dry ingredients - flour, bicarbonate of soda and salt. Mix with the electric whisk and your wooden spoon but try not to over mix it


Then add your crushed Caramilk buttons and mix using your wooden spoon


Once mixed roll your dough into a ball and wrap with cling film
Place in the fridge for a minimum 1 hour - you can leave it for long or over night. I just left it for 1 hour


I then used a normal silver table spoon to scoop the dough and rolled it in the palms of my hand. I used the spoon to take the dough rather than using my hands to try to keep the dough as cold as possible.

Once rolled into balls place them on your baking tray leaving space for them to spread



Bake for 8-10 minutes until golden brown

So the bottom of my baking sheets were being blown all over the place and made a mess of the bottom row of cookies. Also as I've not booked in a long time forgot how my oven works and clearly the heat is mainly in the middle rather that the top of the oven hence the second try having a nicer colour!



I need to start making thicker chunkier cookies to make them more like store bought.


These were still good the day after - surprised there was any left for the day after as I ate so much straight out of the oven when they were still warm

Cookie Dough Fries


Cookie dough fries!

I had these a few years ago from the Baltic Market from The Yog Bar so wanted to recreate them. You can see what I mean by looking at the post here.

Ingredients:



175g Unsalted Butter - Soft
150g Sugar
2 Large Eggs
400g Plain Flour
1 Tsp Baking Powder
¼ Tsp Salt
100g Chocolate (Optional)

Dips (Optional) - Melted

Biscoff/Biscuit Spread
Nutella
Peanut Butter
White Chocolate
Milk Chocolate

Utensils:


Mixing Bowl
Electric Whisk
Wooden Spoon
Measuring Spoons
Sieve
Rolling Pin
Non stick sheet - Floured work surface
Clingfilm
Sharp Knife
Chopping Board
Baking Paper
Flat Baking Trays
Wire Rack

Oven 180°C
160°C fan

Baking Time - 12-15 minutes


Method:


Cream the butter and sugar together using the electric whisk until it's pale and creamy



Add the eggs and beat until incorporated


Sift in the flour, baking powder, and salt. Beat using the electric whisk until a dough is formed. I struggled to using the whisk so just used a wooden spoon instead



If you're adding chocolate you can add it now.
I used dark chocolate chips as we had some lying around that needed using up


This is actually the perfect cookie dough - it tasted really good and is a better mixture that the other cookies I've previously made!

Roll out into rectangles onto your non stick paper/floured work surface and wrap with cling film then wrap in cling film and chill for 1 hour in the fridge


I should have rolled them out into rectangles as then I wouldn't have any round edges and all pieces would be straight looking fries/chips!

Once chilled you can cut them into stripes/fries and place onto your baking sheet leaving a bit of space between them as they will puff and spread when baking.



Bake for 12-15 minutes until the edges begin to turn light golden.



 Leave on the tray for a few minutes then transfer onto a wire rack to cool completely.

I think they're more like shortbread rather than cookies but I got good reviews for them when I shared them out! I melted some of the Aldi biscuit spread in a bowl by placing it into the oven while it was still warm as a dip for my fries!

Oatmeal & Raisin Cookies


I am so proud of these oatmeal & raisin cookies. They're actually better than the shops. Millie's who? I could've eaten them all at once they're that good! The pictures really don't do them justice cos they are so much better than the photos can show!

I just googled "oatmeal and raisin cookies" I choose the second one that came up as for the first recipe it says use vegetable oil & we don't have that in. The recipe is from BBC Good Food. You can find it here.

Ingredients


100g margarine/butter (at room temperature so it's soft)
100g caster sugar
1tbsp honey
2 eggs
1/2 tsp cinnamon powder
1 tsp vanilla extract
100g wholemeal flour
1tsp baking powder
160g poridge oats
150g sultanas/raisins

I doubled everything that was on the recipe as 50g is nothing! I also added vanilla extract & walnuts. (Vanilla makes everything taste better!)

Pre-heat the oven to 180°C / 160°C (fan assisted) / gas 4.

Whisk your margarine/butter till it's soft.


Add the sugar & whisk till you get a creamy consistency


Add your honey. Cos I doubled everything I put 2 tablespoons of honey & it's a little too sweet so I'd recommended just the 1



Add the 2 eggs (don't know what happened to mine)


Once it's all mixed you can add the cinnamon & vanilla extract





In another bowl combine all your dry ingredients with a wooden spoon. Flour, baking powder, oats, raisins & walnuts.



Once it's all mixed together gradually add it into your wet mixture & mix with your wooden spoon.





Once it's all mixed together use a tablespoon & drops heaps onto baking paper





Bake for around 10-15 minutes. Spinning the tray around every 5 minutes. Keep checking them. You'll know when they're done once they're brown & have solid edges.




My most successful bake for sure! So so happy with them. Just a little too sweet but still so good.
