I am so proud of these oatmeal & raisin cookies. They're actually better than the shops. Millie's who? I could've eaten them all at once they're that good! The pictures really don't do them justice cos they are so much better than the photos can show!
I just googled "oatmeal and raisin cookies" I choose the second one that came up as for the first recipe it says use vegetable oil & we don't have that in. The recipe is from BBC Good Food. You can find it here.
Ingredients
100g margarine/butter (at room temperature so it's soft)
100g caster sugar
1tbsp honey
2 eggs
1/2 tsp cinnamon powder
1 tsp vanilla extract
100g wholemeal flour
1tsp baking powder
160g poridge oats
150g sultanas/raisins
I doubled everything that was on the recipe as 50g is nothing! I also added vanilla extract & walnuts. (Vanilla makes everything taste better!)
Pre-heat the oven to 180°C / 160°C (fan assisted) / gas 4.
Whisk your margarine/butter till it's soft.

Add the sugar & whisk till you get a creamy consistency
Add your honey. Cos I doubled everything I put 2 tablespoons of honey & it's a little too sweet so I'd recommended just the 1
Add the 2 eggs (don't know what happened to mine)
Once it's all mixed you can add the cinnamon & vanilla extract
In another bowl combine all your dry ingredients with a wooden spoon. Flour, baking powder, oats, raisins & walnuts.
Once it's all mixed together gradually add it into your wet mixture & mix with your wooden spoon.
Once it's all mixed together use a tablespoon & drops heaps onto baking paper
Bake for around 10-15 minutes. Spinning the tray around every 5 minutes. Keep checking them. You'll know when they're done once they're brown & have solid edges.
My most successful bake for sure! So so happy with them. Just a little too sweet but still so good.
