Peanut Butter Cookies

I baked peanut butter cookies today as I have a seriously bad obsession with peanut butter lately which I really need to sort out cos it's not doing me any favours especially not on the waistline that's for sure! I wanted to make coconut cookies but we didn't have any coconut so had to make do with what we had.


Ingredients

225g unsalted butter (at room temperature, so it's soft)
175g caster sugar (if you just use white, you will get crunchy cookies, like biscuits)
175g soft brown sugar (if you just use brown, you will get chewy soft cookies)
1 teaspoon vanilla extract
2 eggs (at room temperature)

350g unsifted plain flour
1 teaspoon baking powder
1 teaspoon salt

Jar of crunchy peanut butter or anything you want chocolate, raisins, nuts, dried fruit

Preheat the oven to 190°C

You will need an electric whisk, wooden spoon, teaspoon, 2 bowls, 1 that you can use an electric whisk in & one just to mix your dried ingredients (flour, baking powder & salt)
Non-stick baking paper - I recommend Tesco own


Whisk the butter with an electric whisk until creamy


Once creamy add the brown and white sugar on a high speed until light and fluffy





Beat in the egg, 1 at a time







Once the eggs are mixed in, whisk in the vanilla extract


Mix the dry ingredients, flour, baking powder and salt in a separate bowl


Once that's been mixed you can add the dry ingredients gradually into the creamed mixture. Mixing on a low speed just until the flour is incorporated.




I then added about 5 tablespoons could've been more of crunchy peanut butter. My favourite is Tesco everyday value. I've had Morrison's own just isn't the same!

This point you can add whatever ingredients you want your cookies to be whether it's chocolate, nuts, dried fruit raisins, whatever you want!


Using a teaspoon spoon the cookie dough onto your baking tray. Just literally throw it on, doesn't have to be done in anyway the cookies with grow in your tray just make sure you give them space so they don't all stick together!

Bake for 15-20 minutes until golden. Then leave on a wire rack to cool.



I ended up with a lot of cookies! But there were good! Crispy around the edges, soft & chewy in the middle!
