Sweet Potato Mash Fish Pie - so easy to make & doesn't even take that long!
2 large Sweet Potatoes
25g Butter
A Leek - cut into chunks
Onions
25g Plain Flour
400ml Milk
Chunky meaty boneless fish - Cod, Pollack, Haddock, Salmon or fish pie mix
Preheat your oven to 200°C
Peel & boil your mash potatoes in pan. Once soft mash it. You can add some butter or cheese if you like but I just seasoned with some salt & pepper.
In another pan melt you butter than put add you onion & leek. Cook it until your onion is translucent.
Add you flour so your veg is coated.
Add the milk, mixing it continuously so you don't get any lumps until you get a nice thick white sauce. Season with salt & pepper.
Take your pan off the heat & add your fish.
In a casserole dish place your mixture into it & top with the sweet potato mash.
Bake in the oven for 20-25 minutes until bubbling at the edges.
You can use white potato. I changed the recipe for sweet potato as I prefer it & wanted to try something different. It's up to you what fish you choose to use. Any chunky meaty fish will do & most supermarkets/fish mongers do fish pie mixes where they have different chunky bits of fish you can put into a pie. You can also put the left overs into a box & freeze it to eat whenever you don't want to cook.
