Oat and Fruit Scones


Tried something different... was suppose to be making coconut and oat cookies but I forgot to buy coconut! So I had to settled with oat and fruit scones instead.


200g / 7oz - Plain flour
170g / 6oz - Porridge oats
4 tablespoons - Sugar
2 dessertspoons - Baking powder
½ teaspoon - Salt
75g / 3oz - Dried fruit - sultanas/raisins
1 Egg, beaten
1 teaspoon - Vanilla extract
110g / 4oz - Butter, melted
75ml - Milk

Preheat your oven to 220°C


Put all your dry ingredients into a bowl - flour, oats, sugar, baking powder, salt and dried fruit.


Beat your egg with the vanilla extract,


Pour your egg mixture and melted butter into your milk and mix it together.


Make a little well in the middle of your dry mixture and pour in the milk mixture.


Once it's all mixed make a dough and use a cutter to make little scones.


Brush the tops with milk and bake in the oven for 10 minutes until gold brown.


Slightly over baked and ended up with loads! Didn't think the mixture would end up with 20 scones. I think they're quite dry because of the oats. Definitely worth having with jam and cream if you like eat that with scones!

I made normal scones as well so I've actually got scones for days!

Tai Pan


Went to Tai Pan for yan ta - Chinese brunch with some of the gym crew - Andrea, Sarah, Lewis, Jo, Jacob, Rich and Jonny. Jonny had to leave early and didn't want to get in our photo.

Andrea, Sarah, Lewis and Jonny had never tried yan ta before so we thought it we would take them to try something different! I've never actually been with any of my mates only ever been with my family so I'll have to sort that out soon!

We ordered so much food and managed to eat all of it! They all enjoyed it and was definitely an experience. Chinese food is obviously the best not bias or anything!

We did go to the gym this morning and I did a 5k run with Jo and Jonny in the snow and hail!! I was an actual drowned rat but luckily Rich lent me his coat so was alright apart from the hail hitting me in the face actually hurt! My worst nightmare I don't do rain never mind snow/hail/sleet. I had to go to try and make up them miles 9 weeks to go!


After going to Tai Pan went to Costco with Jo, Rich and Jacob. We just went round eating all the samples. Come home and had crispy duck and pancake for dinner cos my brother was home.


I only managed 3 cos I was that full!

I was a domestic goddess yesterday I made lasagne and scones. Was in the kitchen for about 4 hours cooing and cleaning. My mum thinks I'm the worst daughter ever - well I proved her wrong didn't I.



Avocado and poached eggs on seeded bread for lunch post gym.




I thought I posted a lasagne recipe when I made it before but turns out I never so will have to get one up next time I make it again. I've made scones so many times so the recipe is here if want to make them! Productive busy weekend - back to it this week then a week off work!

Healthy Scones

New day new bake... 

Scones!



I spent the morning/afternoon at my Gran's. I went to have lunch as she makes the best pasta & to bake scones. I feel like a scone right now writing this as I've lost count of how many I've eaten today! Working it all off tomorrow morning in insanity so it's all good.

I've posted this recipe before on the blog but here it is again a lot better..!

8oz / ½ lb / 227g - Self Raising Flour
2oz / 57g - Sugar
3oz / 85g - Margarine - soften at room temperature
2 Eggs
Sultanas (Up to you how much you want to put in)

Optional
1 tsp Vanilla extract (Gives it more flavour)
Desiccated Coconut

Pre-heat oven to 200°C 
Baking time 15 - 20 minutes

(Drop of milk to brush over the top)

Mix your flour & sugar



Mix your soften margarine into your flour & sugar using a fork


Once the margarine is all mixed in you can add your sultanas


Whisk 2 eggs in a bowl with a fork then pour into your dough. This would be a good time to add your vanilla extract if you choose to use it. We didn't put any in this time, but I would recommend as they taste better!



Once your egg is mixed in, it's time to get your hands dirty! Rub your hands with self raising flour & flour your work space & knead your dough.




It's up to you how thick you want to make them & what size cutter you use. We made pretty big ones. I would usually use baking paper but my Gran just floured a flat baking dish.
Once they're on the tray brush them with milk. 

Then bake for 15-20 minutes until they're golden


They tasted so good! Especially straight warm out of the oven. I've been doing really good in the gym & this week has been hard but I feel like it's just all been wasted with the past 2 days worth of baking! But as long as you have things in moderation it's all fine. You shouldn't be restricting yourself of things otherwise you'll end of craving them. As long as you're not going crazy & over eating.
