Tried something different... was suppose to be making coconut and oat cookies but I forgot to buy coconut! So I had to settled with oat and fruit scones instead.
200g / 7oz - Plain flour
170g / 6oz - Porridge oats
4 tablespoons - Sugar
2 dessertspoons - Baking powder
½ teaspoon - Salt
75g / 3oz - Dried fruit - sultanas/raisins
1 Egg, beaten
1 teaspoon - Vanilla extract
110g / 4oz - Butter, melted
75ml - Milk
Preheat your oven to 220°C
Put all your dry ingredients into a bowl - flour, oats, sugar, baking powder, salt and dried fruit.
Beat your egg with the vanilla extract,
Pour your egg mixture and melted butter into your milk and mix it together.
Make a little well in the middle of your dry mixture and pour in the milk mixture.
Once it's all mixed make a dough and use a cutter to make little scones.
Brush the tops with milk and bake in the oven for 10 minutes until gold brown.
Slightly over baked and ended up with loads! Didn't think the mixture would end up with 20 scones. I think they're quite dry because of the oats. Definitely worth having with jam and cream if you like eat that with scones!
I made normal scones as well so I've actually got scones for days!
