Coconut Cake


225g / 6oz - Self Raising Flour
Pinch of Salt
115g / 4oz - Butter, cut into small pieces
115g / 4oz -  Demara Sugar
100g / 3oz - Desiccated Coconut. Extra for dusting on the top
2 Eggs, lightly beaten
4 tbsp Milk

Preheat the oven to 160°C
Line a 900g / 2lb loaf tin with baking paper.


Sift the flour and salt. Rub the butter with your fingertips until the mixture resembles fine breadcrumbs. 


Lightly beat the 2 eggs


Add the sugar 


Add the coconut



Stir in the egg and milk using a wooden spoon


Spoon the mixture until the tin and smooth the surface.

Bake for 30 minutes.

Sprinkle the extra on top and put it back in the oven for additional 30 minutes until well risen and golden and a skewer comes out clean. Don't open the oven unless necessary as this will stop it from rising!

Leave the cake to cool slightly in the tin , then turn it out onto a wire rack to cook completely. 

I had just enough coconut so couldn't sprinkle it on top! 


Could definitely have done with more coconut but it still tasted good! I don't tend to make cakes but this turned out really well and was really nice. Made custard to go with it too but it's fine to eat on it's own as it's not dry at all but could have done with maybe some walnuts in it.

Hus


Met up with Holly for lunch today at Hus. The last time I seen Holly was when we went to see Bastille last month. It feels like it was months ago when I seen Bastille
Holly made such an effort to see me wearing a suit where as I turned up in my gym gear. I know it was over a month ago but didn't need to! (She was in work clearly has to dress more formally than I do.)


I got the Beetroot Tagliatelle - pasta with salt baked beets, carrots, red pepper and tender stem broccoli. With mixed leaf salad. 

I added chicken to it but she didn't charge any extra. I mean I did only get 3 pieces.

It was really filling I was so full after it. I was debating getting the avocado, poached eggs and smoked salmon which I kinda wish I got cos I felt so bloated after it!


Holly got Courgette, red pepper and hummus sandwich. With the soup of the day Pea and Ham.

It's nice in there with a really nice roof top beer garden perfect when the sun's out. Probably will go back and have the avocado, poached eggs and smoked salmon!

Rock n Roll


Today was the Liverpool Rock n Roll Marathon which I should have been running. I was so sad and gutted that I wasn't doing it! :(

Got into town for before 9 with Jo, Rich and Sarah. The weather was perfect maybe a bit too hot for a marathon but anything is better than the rain and elements we've had to deal with! The race started at the Albert Dock. We watched the start of the Half Marathon that started at 9ish which Jack, his sister and cousin was running. Angie and her partner Jonny were also running too. Rich was suppose to run but decided not to cos he hadn't trained and didn't want to get a worse time. The full wasn't starting till around 10ish so we stayed with Jo and hyped her up ready to go.





Should've been matching with these 2 with my compression socks too!

You could go down and sign up on Friday night I was so tempted to walk down and sign up for the marathon cos I wanted to do it so bad but never.

We left them to start then headed to Love Thy Neighbour on Bold Street to have breakfast.

Clearly hungry... got a scrambled egg & smoked salmon bagel. Sausage and red onion sough dough sandwich 


Sarah got the Cosmic Cacao Smoothie Bowl - banana, avocado, cacao


I got the Berry Blast Smoothie Bowl - raspberries, blueberries, pineapple, banana

I've had the smoothie bowl before when I went with Holly. Was a bit disappointed today though the smoothie was really thin and runny. It was defo thicker last time wouldn't say it was a smoothie. 

After we headed back to the finish line which was at the back of the Echo Arena to see Jack finishing his race. After we headed into town.




We might not have ran any of the races but we did cross the start line!

We went into town to find Rich a neck strap (I think that's what it's called) for his sunglasses but went to every Home Bargains in town, every pound shop, bargain random shop, Primark, T K Maxx and every opticians but no-where sold them! The last place we went to was Boots opticians where we finally found them! Literally trekked all around town to find one. Practically doing our own half marathon there!

We went back to the finish line at around 2pm as we were tracking Jo and she was due to finish around quarter past. 




She's amazing and absolutely smashed it with a time of 3:57:51. Beat that 4 hour mark we wanted! Didn't train further than 17 miles either but on the day just did it! I am so proud of her and literally look up to her at how amazing she is. I know if I was doing it I probably wouldn't have been able to keep up as she was so consistent averaging around 9 minute miles. I would've struggled so bad especially with that heat!


Rich thinking he's just ran a full marathon before Jo got her time engraved onto her medal. Absolute rip off for £12 for an actual second. We blinked and it was done!



Met up with Jo from work who ran the half with Iain from work. She wanted to meet the other amazing Jo since she gave us the plan for this marathon even though we didn't quite stick to it - it really helped thanks! 

Jonny sadly didn't finish the race but he tried and managed to do half of it. Injury got the better of him but he did more than me by actually starting the race. We'll both do it next year and smash it! We've got our own coach that's been there done it and has the t-shirt to show for it!

Congratulations and well done to everyone who ran the half or full marathon or 1 miler today and the 5km race yesterday. You're all amazing and all the training is definitely worth it for that medal!!

Jo you're the best and I hope when I finally get to run a marathon my time is just as good as yours!

Jacq's Leaving

Part 2




Last night was Jacq's leaving night part 2. Yep it happened again nearly a year on to the day if you remember the first one at Ghetto Golf last year!

Jacq's leaving us again to go to Camp America in 2 weeks then he's going to Canada so he's not coming back! We went out straight from work for drinks at 3:30pm in the pub by work then went to Birdie's Bar and BBQ outside where Ghetto Golf is. We got food and drinks there.











After we got taxi's down to Mathew Street and ended up some random bars and pubs.
