Monte Creams


For my secret Santa Kelly got me a baking book so I thought on New Years Day I'd do some baking as we've got a new oven. I had to look for recipes which we actually had the ingredients for. I stumbled on Monte Creams which sounded good. 



125g / 4½oz unsalted butter
115g / 4oz caster sugar
60ml / 2fl oz milk
185g / 6½oz custard powder
30g / 1oz desiccated coconut

Preheat your oven to 180°C



Cream the butter and sugar together with an electric whisk until light and fluffy.


Add the milk 




Add the flour, custard powder and coconut using a wooden spoon. 


Once you have a dough - roll small balls using your palm and place on baking paper.



Then using a fork covered with custard powder lightly press the dough. Bake in the oven for 15-20 minutes till golden brown. 



They taste like them little butter biscuits you get in the tins that many parents have as sewing boxes! One of the trays come out darker as it was on the top shelf. The middle shelf ones turned out better but they were nice!

I decided to leave them just as biscuits but if you want to make the cream filling...

75g / 2¾oz unsalted butter, softened
85g / 3oz icing sugar
2 tsps milk
105g / 3¾oz strawberry jam

Using an electric whisk beat the butter and icing sugar together until you get a nice creamed mixture. Then beat in the milk.

Spread half the mixture then half the jam on one half of the biscuit and sandwich another biscuit together.
