Homemade Sushi

Made homemade sushi for lunch. 
I say "made" I didn't actually make or fold them my mum and brother did. I just bought the ingredients, supervised and ate...

Sushi is actually pretty hard to make - trying to fold it is hard to ensure your filling doesn't fall out and stays neat. It is a skill to perfect it. 

We have sushi rice which is different to normal rice as it sticks more. Cook it in the rice cooker then cool it with ice water. Once it's cooled mix in rice vinegar and a bit of sugar - your rice is ready to use. We used smoked salmon, omelette, cucumber and avocado. You're suppose to have a bit of wasabi but my brother doesn't like it so we never put any in. We also had black sesame seeds to roll in. 

They were really nice and filling. The cost of all this would probably be the same as a try you would get to take out from a restaurant. Only they would use fresh raw salmon we used smoke salmon.

Maray


Is this not the most stereotypical & expected blogger post? Well Kelly's home for the weekend from London so we went to Maray on Allerton Road for brunch.

It's really nice in there & cosy in there. Not much choice on the brunch menu though only 4 options. Me, Kelly & Hannah picked the exact same thing where as Danielle decided to be different.

Danielle's looked really good and so was the avocado & smoked salmon however would have preferred the typical smoked salmon & not pieces of actual bits of salmon.




It was so nice to catch up it's been a while since it was the 4 of us!

Spent the rest of the day in town, panic buying for clothes as I'm doing extra work at Cold Feet again tomorrow in Manchester & have no clothes. Just me or are shops rubbish at the moment? Money & particular style wasn't even an issue I just needed anything that would look ok on me & comfortable in! Managed to get a shirt & dress from Zara. Shirt looks like one I already have & the dress looks like 2 dresses I've already got! But at least I bought something Zara was actually the last shop we went to so I had to get something from there but they stuff in there hasn't been great lately. 

Up at 5am to drive down to Manchester for a probably really long day of sitting around waiting! Joys of being an extra but it is fun I do enjoy it so watch out when Cold Feet is back in October.

Healthy Lunch Ideas


I've been meaning to do this post for months. I take pictures of my lunches but just never got round to writing the post for it. I did a post back in March called Post Gym Lunch where I had a toasted New York Bagel Co bagel with smoked salmon, avocado & poached eggs. All these are healthy ideas if you're struggling to make something. They're all really quick to make & don't need hardly any prep for! Don't even involve that much cooking either!


Baked sweet potato, smoked salmon, half an avocado & cucumber 


Whole wheat pasta, tuna, sweetcorn, carrots, cucumber & tomato


Egg noodle stir fry with roast chicken, shredded carrot, red onion & asparagus

These are just some of the lunch I've been having I do have porridge a lot after the gym. Just normal porridge oats microwaved using semi-skimmed milk. 

1 cup of porridge oats, 1 cup of semi-skimmed milk. Microwave for a minute. Take it out, stir it, back in for another minute. Then put some sultanas in, a banana & some berries if you have any.

I'll even have any left over dinner we have from the night before. It's very varied what I have but I do try to have some sort of protein as you body needs it after a workout to repair your muscles. I need to try & eat more protein as I'm trying to not bulk up but be more muscley. Have some definition & tone up. I'll try to post more photos of the food I eat just to give you some ideas of what to have.

Post gym lunch

Made the perfect post gym lunch today. Toasted New York Bakery Co bagel, avocado, smoked salmon & perfectly poached eggs. 



As well as being the pancake queen I'm also the poached egg queen. I have mastered the art of poaching eggs which is actually the easiest way to cook eggs out of all the different ways you can. 

How to perfectly poach eggs

Boil a pan of water
Crack an egg into a mug
Once the water starts to boil, pour your egg into the water
Leave it in there, don't touch it for around 2 minutes
Then use a slotted spoon to take your egg out of the pan making sure not to let the yolk leak out

It is that easy. You don't need to touch it or anything. I usually time it while my toast/bagel is in the toaster which I set to 2.

I'll try & post more healthy lunch & dinner ideas but I don't tend to have anything that interesting just whatever we have in I tend to just throw together!
